1/2 pkg. Soy Curls™ (4 oz.) (approx. 3 cups) cover with warm water and soak for approx. 10 min.
1 large onion, chopped
2 cloves garlic, minced
2 Tbsp. olive oil
5 medium potatoes, cut in cubes
4 stalks celery, chopped
2 carrots, sliced
6-8 cups water
1 Tbsp. salt
1 Tbsp. sugar
2 Tbsp. non-dairy creamer, or 1/2 cup soy milk, or milk
1/4 tsp. turmeric
4 sprigs fresh parsley, or 1 Tbsp. dry
1 Tbsp. freshly squeezed lemon juice
In large kettle saute' onion, minced garlic, and oil for about 2 minutes. In same kettle add Soy Curls™, potatoes, celery, and carrots. Saute' for about 2 more minutes.
Cover with water, add seasonings, and simmer until vegetables are tender.
